Pont l'Eveque (sometimes known as Leveque Cheese) is a soft, cow's milk cheese from France and certainly one of our most popular French cheeses. It is similar to a camembert, but the rind is washed before aging with a brine solution that makes it moist. This gives it a much more pronounced flavor and a rustic aroma. An AOC controlled cheese, Pont l'Eveque's manufacture is bound to strict quality control and very particular processes to maintain authenticity. Probably the oldest Norman cheese, it takes two liters of milk to make one Pont l'Eveque of 8.8 oz. . The interior is creamy yellow, fine-textured, and smooth. It sinks under pressure but has no elasticity. As the cheese ripens, the rind grows sticky and reddens, and small holes spread through the cheese. Further ripening will result in an interior that glistens with fat when cut. There are lingering traces of sweetness in the taste. Each unit is 7.7 oz and comes in an individual wooden box.

Directions for Use | It’s usually best not to cook truffles, as a little heat will release their aroma, but a lot of heat will destroy it. For best results, freshly grated or sliced truffles should be applied over a just-served, still-hot dish. Preheat oven to 150°C or 302°F for approximately 12 minutes, remove as soon as the butter boils and serve while hot. |
