Mimolette French Cheese, Aged 18 Months description:
Mimolette is a semi-firm, pasteurized, pressed, aged, cow's milk cheese from France. This specific Mimolette is aged for 18 months, supplying a harder texture and more hazelnut taste than its counterparts that are aged for a shorter time. It has a strong, sharp but mild, fruity and nutty flavor with slight caramel notes. It has a bright, orange interior. This cheese is also known under the name of "Boule de Lille". The method of production of Mimolette is similar to the Dutch cheese Edam, so much so that it has been called the "French Edam". Can be grated on top of foods or served as a snack with beer. This Mimolette is produced by Isigny. Cut cheese, up to 6.2 lb/2.81 kg.
