Grey mullet roe, also known as avgotaraho (Greek), batarekh (Arabic), botarga (Spanish), bottarga (Italian), karasumi (Japanese), or poutargue (French), is cured naturally without preservatives. Coated in natural beeswax, the taste of this roe is best compared to a flavor combination of “fruity” and an ocean sea breeze.
This product is high in nutrients, vitamins, and Omega-3 fatty acids. Cut a slice and remove the wax before consuming, whether by itself, with foie gras, on toast or warm blini, or grated on salads or pasta with plenty of parsley.
