Truffle Butter with Fresh Black Truffles, Crushed Avocado, and Smoked Trout Roe



½ oz Fresh Black Truffle
1 Avocado
½ Lemon
¼ Chili Minced
1 oz Extra Virgin Olive Oil
½ Shallot Finely Chopped
Pinch of Black Pepper
12 slices of Sour Dough Bread



  1. Preheat oven to 375 degrees F (190 degrees C)
  2. Place butter in a ramekin and cover with fresh black truffle slices
  3. Skin and deseed Avocado
  4. Place Avocado in a bowl with lemon juice, extra virgin olive oil, shallots, chili and black pepper
  5. Crush Avocado using the back of a fork and season with salt to taste
  6. Place Avocado in a ramekin and top with Smoked Trout Roe
  7. Place bread slices in the oven for 5 minutes
  8. Serve and enjoy
