The rabbit is air chilled, which allows for the preservation of its delicate flavor and tender texture. Compared to water-chilling, it's more environmentally friendly and better for the quality of the rabbit, as the meat doesn't absorb water during the chilling process.

Recipe for perfectly grilled rabbit:

  • Set the grill to 177 degrees C/350 degrees F.
  • Cook until the internal thigh temperature is 160 degrees F/71 degrees C.

    • To prepare the marinade, you will need to mix 5 cloves of garlic, 1/2 onion, 1/4 cup of parsley, 1/2 of lime (juice), 3 tbsp of olive oil, 2 tsp of smoked paprika, black pepper, and sea salt.

    To prepare a side of mashed potatoes, you will need 5 large potatoes, 1 whole stick of butter, 1 whole cream cheese, milk to taste, salt to taste.

    To prepare the basting liquid, you will need 1/2 stick of salted butter, 1 tsp of smoked paprika, and 3 garlic cloves smashed and mixed with 1 tbs of sugar.
