Finochhiona Dry Salami is a delctable Berkshire pork salami inspired by the ancient fennel salami from Tuscany. Crafted from lean all natural cuts of pork and studded with flavorful fatback, Finochhiona is flavored with fennel seeds and wild fennel pollen imported from Italy. The wild fennel pollen gives this salami its signature mild floral fennel flavor without overpowering the natural porcine flavor of the meat. We add red wine to the mix for an extra layr of flavor. Finochhiona is a perfect addition to any antipasto platter.
