-½ cup Cognac or Armagnac (optional)

 

Instructions:

-Trim any blood vessels or connective tissue from the liver. Cut the liver into small pieces and set it aside.

-In a large skillet over medium heat, sauté the onion in oil until it is softened.

-Add the liver and thyme and continue to cook for several minutes, until the liver is browned on the outside but still pink in the center.

-Pour in the wine and Cognac (if using) and bring to a boil.

-Reduce the heat to low and simmer for about 15 minutes, until the liver is cooked through.

-Remove from heat and let cool slightly.

-Place the liver and onion mixture in a food processor and blend until smooth.

-Add the cream, salt, black pepper, and cayenne (if using) and blend again.

-Taste and adjust seasoning as necessary.
