-Two tablespoons of olive oil

-One green bell pepper, diced

-One red onion, diced

-Three cloves of garlic, minced

-One teaspoon of smoked paprika

-One teaspoon of ground cumin

-1.5 cups of short-grained rice

-Four cups of chicken broth

-One (14. oz) can of diced tomatoes, drained

- potatoes, peeled and thinly sliced

- olive oil

- ham, diced

- eggs, beaten

- parsley, chopped



- Set the oven temperature at 375 degrees F. (190 degrees C).

- In a large cooking pan, heat the olive oil over medium heat. Add the potatoes, salt, and pepper. Cook for about 15 minutes, stirring occasionally until the potatoes are tender and golden brown.

- Add the onions, garlic, and ham to the pan. Cook for about five minutes more, until the onions are soft.

- Pour the beaten eggs into the pan, and sprinkle with parsley. Cook for about five minutes more, until the bottom of the tortilla is set and golden brown.

- Place the pan in the oven, and bake for about ten minutes, until the top is firm and golden brown.
