This rillette is made by gently cooking delicately seasoned meat until tender, pounding it into a smooth paste, then combining it with foie gras, toasted wheat crumbs, white wine, pepper, garlic, and herbs. This process makes it a completely ready-to-eat delicacy. Remove from the refrigerator 30 minutes before serving. Warm-up a dessert spoon with hot water and scoop out spoon-sized portions. Display on the center of plate. Add ground pepper to taste. Serve slightly chilled with or on top of French bread or brioche. Could be accompanied by cornichons or pickled onions. Pair with a chilled French dessert wine.
