Neatly tucked away behind the velvet blue curtains of our retail store, Marky’s on Madison, you can find New York’s Michelin-Guide gem HŪSO. This 12-seat speakeasy caviar bar is named after the most prized species of sturgeon, Beluga, scientifically known as Huso huso. Guided by the vision of Marky’s Executive Chef, a Bravo Top Chef winner and Eleven Madison Park alum, Chef Buddha Lo, HŪSO strives to create decadent dishes that highlight the rich flavor of caviar throughout every course. For lunch, HŪSO serves a delicious, traditional caviar service accompanied by an à la carte menu with dishes priced between $20-$45. However, in the evening, the restaurant transforms to present an elaborate $225 8-course seasonal tasting menu. One highlight of the à la carte menu includes our famous “Huso Dog”, an Alaskan King Crab roll served on a delicate brioche and topped with pickled mustard, mayonnaise, and Beluga di Venezia Caviar. Each dish at HŪSO creates an unforgettable, luxury dining experience, highlighting the unique flavors of a variety of caviars with the assistance of other gourmet ingredients.
