Jumbo Lump Red Crab Meat

Firm, round, solid piece of red muscle meat picked from the fin muscles. From extra large crabs comes the “Imperial” Jumbo Lump sometimes called Colossal. It should be firm, not mushy, and have a glossy white, velvety surface. It is almost free of shell fragments*.
