Ribeye is a tender, boneless rib steak derived from the upper ribcage of the cow. It has a good amount of marbling and fat, which makes it great for quick searing. The surrounding fat cap and marbling throughout penetrate into the beef while cooking, resulting in a very flavorful steak. As one of the most prized cuts, it is no surprise this steak is served as a favorite dish in steak houses and fine dining restaurants.
To prepare, remove the ribeye from the fridge, allowing it to reach room temperature prior to seasoning with salt and ground pepper. Sear the steak in light olive oil in a hot pan. Once the meat is golden brown on all sides, melt a little butter in the pan. Add garlic and rosemary, then spoon the melted garlic butter and rosemary mixture over the steak. Cook the steak until it almost reaches your desired temperature, then remove it from the heat. After the steak is done, let it rest for a few minutes before, then slicing and serving.
