Tobiko is harvested from the tropical Flying fish and its natural color is bright orange but to make it more special it is also marketed in different color versions like Black Tobiko. To obtain the black roe it is dyed with the natural squid ink. The resulting black Tobiko has the same crunchy texture of the original roe with the pronounced fresh sea flavor but its appearance is much fancier and very similar to the appearance of the black caviar. Using of Black Tobiko is making sushi look more expensive and thus even more delicious.
But the usage of Black Tobiko is not limited only to sushi or other dishes of Japanese cuisine. It is widely used in continental and fusion cuisine not only for decoration purposes but also for adding the sea flavor to different dishes, both cold and cooked like salads, pasta, risotto and so on. The Black Tobiko would be also a great addition to your everyday diet as a part of a wholesome snack on a canape or in a caviar-like way in a half of a hard-boiled egg with a dollop of creme-fraiche.
