San Simon Da Costa DOP is a semi-soft, pasteurized cow's milk cheese made in Lugo, the Galicia region of Spain. This teardrop-shaped, creamy yellow colored cheese is aged and ripened for a minimum of 30 days. It has a woody taste and creamy buttery texture that is semi-hard, semi-elastic, and dense. The rind is hard, smoked, and golden from the insid with little eyes. During preparation in San Simon, it is lightly pressed and then smoked with birch wood, giving it its smoky touch and unique woody aroma and slightly acidic flavor. Cut cheese, up to 2.5 lb.
