Marky's Paddlefish caviar, also known as "Spoonbill roe", comes from the American Paddlefish, a freshwater fish and close relative of the sturgeons. It is often called the first-timer's caviar due to its bold and earthy flavor. Still, its taste is buttery, which smooths over the palate. The grains of American Paddlefish caviar are similar in size to Sevruga caviar with its color varying from light grey to chalky black. This caviar is very tender with a gentle structure.

*On some occasions, Paddlefish caviar may be substituted by higher end sturgeon caviar.

The American Paddlefish, also known as the Spoonbill, is a close relative of true sturgeons, inhabiting the Mississippi River and its vast tributary and delta systems. Named for its distinctive long and flat snout, this unique fish produces a prized yet accessible caviar.

Paddlefish roe typically ranges in color from light to dark steel gray, sometimes with subtle hints of silver. Its pearls are small to medium in size and have a smooth, glossy texture, resembling the look of Sevruga caviar. They deliver robust, earthy, and briny flavors that are best appreciated by those already familiar with traditional sturgeon caviar, followed by a rich, buttery finish that lingers on the palate.

  • If you need your caviar by a specific date, we strongly recommend scheduling its delivery at least 2-3 days in advance to avoid potential shipping delays. When kept refrigerated below 38 °F (3.3 °C), unopened caviar has up to a 6 week shelf life. Once opened, it's best to consume it within 3 days.

  • Under certain circumstances, we may substitute an order for Paddlefish caviar with higher end sturgeon caviar instead.
