It is pasteurized, but at the lowest temperature allowed by law, which helps retain some of the flavors of unpasteurized cheeses. It is super creamy with a mousse-like interior and mushroom-like aroma with a straw color, soft surface, and delicate and harmonious flavor. One unit, 8 oz each.
