FEATURES

Fresh Whole White Spring Truffles, Tartufi Bianchetti Interi (Tuber albidum pico) - 1 oz (28 g) to 1 lb (454 g) in resealable pouch, by Marky's, from Italy.

Fresh Bianchetti White Spring Truffles boast a powerful aroma and distinct flavor. Similar but less intense than the prized Alba White Winter Truffles (Tuber magnatum pico), and at a fraction of the cost, these truffles are cherished across Italy for their culinary applications. They lend an intensely pleasant fragrance and a rich, garlicky-earthy taste to dishes, making them ideal for those who appreciate bold flavors in the kitchen.

What Should I Know About White Spring Truffles?

Scientifically known as Tuber albidum pico, and colloquially known as whitish, Bianchetto or Marzuolo truffles, these truffles grow naturally underground in symbiosis with tree roots. They are primarily harvested from late January through early April in Italy, where they thrive in the same regions that produce their winter counterparts.

While their aroma is less intense than that of Alba truffles, Bianchetti truffles still offer a robust, complex, and highly pleasant flavor profile. On the outside, both have an irregular, bumpy shape, but Bianchetti truffles appear significantly darker, varying from light beige to reddish-brown. On the inside, their flesh is also markedly darker, marbled with streaks of delicate white veins.

How Do You Store White Spring Truffles?

White spring truffles are highly perishable and should be stored properly to maintain their quality. Doing so can make them last 5-7 days, though they are best enjoyed as fresh as possible. Follow these steps to store them for later use:

  • (1) Upon arrival, inspect your truffles for any dirt or debris.
  • (2) If needed, gently brush off any excess soil using a soft brush or damp paper towel.
  • (3) Use a short, sharp, clean knife to carefully remove stones or debris lodged in the crevices of the mushroom.
  • (!) Do not wash truffles with water, as moisture accelerates spoilage.
  • (4) Use a clean paper towel to gently remove moisture from each truffle.
  • (5) Wrap each truffle individually in a clean paper towel and place them all in an airtight container.
  • (!) Change the paper towels daily to keep the truffles free from excess moisture.
  • (6) Keep the container on the upper shelf of your refrigerator.

How to Use White Spring Truffles in Cooking?

Before using, ensure your truffles are properly cleaned as described above. White spring truffles are best enjoyed raw, as heat diminishes their aromatic potency. Their garlicky, slightly spicy, and earthy notes shine when freshly shaved over warm dishes, allowing the residual heat to enhance their flavor.

We recommend using a truffle shaver or mandolin to create delicate, uniform slices. Popular pairings include risotto, eggs, pasta, and butter-based sauces. The bold aroma of these Bianchetti truffles pairs exceptionally well with creamy textures, mild cheeses, and light proteins such as fish or poultry.

How Many Truffles Will Be Enough for a Perfect Dish?

Since white spring truffles are highly aromatic, a little goes a long way. A few thin shavings per serving will infuse your dish with their signature fragrance. If you desire a more intense truffle experience, consider complementing them with truffle-infused butter or truffle oil.
