Le Chevrot French Goat Cheese

Le Chevrot is a soft, unpasteurized, goat's milk, aged cheese from France. Le Chevrot comes from Sevre et Belle, a large, century-old dairy cooperative in the Poitou-Charentes region. It is a soft ripened, hand ladle cheese. It is a "living" cheese : as it is not wrapped, it can thus ripen slowly gaining in character when kept in the fridge at 4-6°C. After three weeks, it becomes dry and numbly. The tender, brainy, edible rind softens the cheese it covers, creating a thick, silk textured cream-line. The center is moist, dense and clay-like with a sweet, tangy flavor in youth that becomes increasingly piquant and nutty with age. Serve at the end of a meal with a white wine when the cheese is young or with a red wine when it has matured. One unit, 7 oz/200 gr.
