Tomme de Savoie is a semi-firm, cow's milk cheese from France. "Tomme" refers to a type of cheese from the French Alps and Switzerland, while "Savoie" refers to the Savoie region of northwestern France where it is produced. It is traditionally made in the winter when the herdsmen have returned from the summer pastures. Don't be put off by the appearance of the rind, which is a result of the aging process. Inside, the pale yellow cheese has few small holes with a pliable and firm texture. The aroma is earthy, with a gentle flavor hintting at meadow flowers, milk and walnuts.
