This ham is the King of the Ibericos. Made from a free range, 100% Iberico pig. During the Montanera season (from October through February), this pig doubles its weight eating acorns and grass. Making it the finest and most prestigious ham in the world. Hand carved style, beautifully presented in a skin pack. The slices are very easy to separate, to present on a plate and impress all Iberico lovers.
CURED FOR 48 months using artisanal methods in La Alberca, Spain, a Natural Reserve declared a World Heritage.
Paleta Bellota comes from the front legs, typically called the shoulder. It's usually smaller - which accounts for the smaller-sized slices, but it's also considered more flavorful and tender than the jamon Bellota, as it has more grease. Paleta Bellota comes from a special breed of pigs, prized for the exquisite flavor of their meat. Fermin uses only select animals, feeding them with a natural diet, and only lightly salting the meat during the curing process, resulting in a moist and rich ham. Perfect to pair with cheese on a meat board, or to make amazing sandwiches.
