Bucherondin French Goat Cheese

Bucherondin is a soft ripened, pasteurized, goat's milk cheese from the Loire Valley of France. Its flavor is mild and has a white curd coated with a bloomy rind. Its flavor has lemony hints but is rather clean. The goat cheese taste is minimal during the early stages of aging and the cheese supplies a silky, creamy texture. Fashioned in the shape of a thick log (“bûche” in French), Bucherondin is a soft ripened hand ladle molded cheese. It is not wrapped, as it is a living, blooming cheese, which allows it to ripen slowly and gain its character. It should be kept in the fridge between 4-6° C, allowing it to age and gain the characteristic goat cheese taste. The best time to serve this cheese is at the end of a meal. Its smooth and dense ivory interior is highly enjoyable with a Sauvignon Blanc or with a medium-bodied red wine, such as Pinot Noir. Cut cheese, up to 4 lb.
