French Goat Cheese Bucherondin description:

Bucherondin - white curd coated with white rind. - up to 1 lb/454 gr, France.

It has mild goat flavour at the biginning of the ripening period and more pronounced at the end, with the slight lactic acidity. Bucherondin is a living bloomy cheese. It is not wrapped and can thus ripen slowly, gaining in character when kept in the fridge at 4°-6° C.
After three weeks it becomes dry and crumbly and is excellent served with aperitifs. Serve it at the end of a meal with white wines when the cheese is young or with a red wine when it has matured. The characteristic goat taste increases steadily when the cheese is kept at 4°-6°C. Bucherondin comes from Sevre et Belle, a large, century-old dairy cooperative in the Poitou-Charentes region. Fashioned in the shape of a thick log (which means “bûche” in French), Bucherondin is a soft ripened hand ladle molded and pasteurized goat milk cheese. It has a wrinkled white coat similar to the bark of a birch tree. Its smooth and dense ivory interior is highly enjoyable with a Sauvignon Blanc or with a medium-weight red wine, such as Pinot Noir.
