Cabra Al Vino is a a semi-firm, goat's milk cheese from Spain. Translating to "drunken goat", this classic Spanish cheese is soaked in red wine that gives it a tangy edge, while the interior is more mild and smooth. The purple rind is a stark contrast to the white interior of the cheese. The cheese is soaked in a red wine for 48-72 hours before beginning the aging process, which is typically 3 to 5 months. The finished cheese is delicate for goats milk, with a nice acidic tang, and a rich, creamy finish that is supplemented by the subtle taste of red wine. Cut cheese, up to 6.6 lb.
