Marky's and our partners, Sturgeon Aquafarms, began the manufacture of domestic Beluga caviar in Florida; now it is the only Beluga aquafarm in the United States, while imports of Beluga caviar and Beluga meat are prohibited.
Our Beluga Hybrid is the result of cross-breeding Beluga with Siberian sturgeon. It is a unique product that exhibits the size and flavor profile of Beluga with the speed of production of the smaller Siberian sturgeon, providing an alternative to the limited supplies of Beluga.
As trade in Beluga sturgeon caviar and meat has been prohibited in the United States for about a decade, tanking the availability and sales of both products, Beluga caviar has been almost impossible to obtain. What is Beluga caviar? This is a product unsurpassed in the gourmet food industry for desirability and near-unattainability. One variety has been entered in the Guinness World Records books as the most expensive food item in the world, costing an incredible GBP 25,000 per kilogram.
This high Beluga caviar price is readily explained under the circumstances. This product is harvested from the critically endangered Beluga (Huso Huso) fish, also known as the "European Sturgeon" native to the Caspian Sea basin. The overfishing and poaching of Beluga in its original environment have nearly led to its extinction, and eventually motivated the United States Fish and Wildlife Service to consider this species as critically endangered and thus to ban the importation of Beluga sturgeon caviar from the Caspian Sea basin starting in 2006. After this the Convention on International Trade in Endangered Species of Wild Fauna and Flora (CITES) suspended trade in Beluga caviar, allowing only very small amounts of this product to be sold on the international market.
Quite aside from its scarcity, though, Beluga is also immensely flavorful. The individual eggs of Beluga caviar have a firm envelope that is still delicate enough to burst with hardly any pressure, releasing the buttery, nutty taste of its fluids. The uncommonly large eggs of the Beluga caviar range in color from light to dark gray, with a glossy finish. The processed product is graded according to its color: the lighter the nearly translucent envelope of the roe, the higher its grade and correspondingly its price.
The Beluga is a fish with a great deal of personality, which can be quite persnickety. It is the biggest known freshwater fish in the world, with only Kaluga, its close relative, in range to complete with it. This is a long-lived species, with the oldest recorded specimen attaining 118 years. During their extensive lifespans, the fish can grow up to 7.2 meters in length and weigh up to 1.5 tons. During the spawning period up to a quarter of the female fish's weight is made up of roe, the precious material harvested to produce Beluga caviar. Older fish produce eggs that are larger, lighter in color, and more exquisitely flavorful.
