Ash Selles Sur Cher – goat’s milk soft cheese – 7 oz/200 gr, France.
Selles sur Cher has an ash-covered rind that develops blotches of gray and blue molds as it ages. After four weeks, the surface of the cheese becomes knobby and the rind is dry. As the cheese matures, it develops a soft blue mold under the ash and the paste hardens and sharpens in flavor. Its stark white paste is characteristic of a true goat cheese, slightly hard at first, then moist, heavy and claylike as it bends and melts in on the tongue. The taste is slightly sour and salty with a mild and nutty flavor.
