Brebirousse d'Argental - sheep’s milk soft cheese - 2.2 lb/1 kg, France
Brebirousse is the only ewe's cheese with red and white mould rind. During his 3-week aging, the rind is washed twice with brine. Thanks to the square shape this cheese is easy to cut.
The products of the Guilloteau range are based on the "ultrafiltration technique" developed by Jean Claude Guilloteau and INRA. Guilloteau is the first dairy in France to use this manufacturing process.
The advantages of microfiltration are numerous:
- outstanding nutritional value: more calcium, phosphorus, and serum proteins;
- very soft texture;
- constant quality.
As the cheese continues to mature, it becomes softer and easier to spread.
