Escargots
Escargots
are highly prized in gastronomy. They are sold either live
or freshly cooked, or frozen. The first French recipe for
snails was written around 16th century. Originating in France,
they are becoming increasingly rare in this country, and imports
have increased to meet the demand. Large snails are imported
from Algeria and Turkey, and China, Indonesia, and Africa
supply preserved snails.
There
are recipes that use only the shells, where the snails are
replaced by game or fish meat and spices.
