The cheese industry is booming here in the U.S. but these cheeses that you'll be seeing and
tasting are not industrial at all. We've selected some of the finest cheeses from farms all across
America, each one of them lovingly hand made by serious caseophiles. This is not the cheese
you grew up with!
Haystack Mountain Goat Dairy - Colorado
This dairy began in 1989 when its founder left his teaching post and began raising
goats. The diverse herd frolics in the foothills of the Rocky Mountains near
Boulder, Colorado. All of the cheeses are raw-milk, vegetarian friendly and are
free of preservatives or growth hormones.

Sprout Creek Farm - Poughkeepsie, NY - all cheese from this teaching farm are made
from raw-milk. If you like farm-house Cheddar, try Toussaint or Ouray.
Cypress Grove Farm - Arcata, CA - we all know them as the producers of Humboldt Fog,
but did you know they also make aged goat Goudas and Cheddars?
