pallet. Blue cheese is one of the oldest cheeses on earth and was created by accident. We offer a vartiey

of blue cheese from all over the world ranging from smooth and creamy, to tangy and strong.

Rocbleu

Rocbleu has a slightly tangy taste and texture

similar to a Brie. This soft creamy cow's milk

cheese comes from the mountains in France.

It is covered with a layer of ash and is perfect

for melting.

Cabrales

This artisinal blue cheese from Northern Spain can be made with cow's milk or a mixture of cow, sheep and goat. Cabrales is aged from 2 to 6 months in natural caves located in the mountains nearby. This cheese is sharp and tangy.

Cashel Blue

Cashel blue was first made by Jane and Louis

Grubbs, a husband and wife team. This blue cheese

from Ireland has a creamy texture and mildly tangy

blue cheese flavor, and is best when it is 3 months

Gorgonzola Dolce

Gorgonzola is an Italian cheese, beloved for its delicious creamy texture and salty tangy flavor produced by the blue mold used in its production. Gorgonzola Dolce is a younger cheese, not as pungent, more subtly sharp, and not as dry as the aged Gorgonzola.

Stilton

Stilton was first made in the 18th century and still maintains the same recipe today. Only cheese from Derbyshire, Leicestershire and Nottinghamshire, that are made a particular way can be called Stilton. Stilton has a rich and mellow flavor with a piquant aftertaste.

Cambozola Cheese

Cambozola was first made in Germany in the 1970s and is a combination of Camembert and Gorgonzola. This semi-soft cow's milk cheese is milder than Gorgonzola but still has that wonderful blue cheese taste.
